Pickle Roll Ups

These are on the menu tonight! Easy, quick, just three ingredients and delicious! This is a great snack in the summer, at parties and even as a side tonight with my chicken salad and corn chowder!

Make Ahead Roll-ups can be prepared, wrapped in plastic wrap and refrigerated up to 24 hours in advance. Cut into pieces just before serving. Make it Easy For easier spreading, pat ham slices dry with paper towels before spreading with the cream cheese. Substitute Prepare as directed, using PHILADELPHIA Garden Vegetable 1/3 Less Fat than Cream Cheese or PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese. Also, you can substitute the ham with sweet Lebanon bologna. Makes 16 servings.

Ingredients:
1 pkg. (6 oz.) OSCAR MAYER Smoked Ham
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA 1/3 Less Fat than Cream Cheese
4 CLAUSSEN Kosher Dill Pickle Spears

Directions:
Spread ham with reduced-fat cream cheese, using about 1 Tbsp. cream cheese for each slice.
Cut each pickle spear lengthwise in half; place 1 half on each ham slice. Roll up. Refrigerate 1 hour.
Cut each roll-up into 4 pieces. Secure with toothpicks, if desired. *From Kraft recipes.

One Skillet Spaghetti


This Taste of Home recipe is like homemade 'Hamburger Helper' if you will.  It is fast, yummy and feeds 4 - 6 people. 

INGREDIENTS

  • 1 pound ground beef
  • 2 medium onions, chopped
  • 1 package (7 ounces) ready-cut spaghetti
  • 1 can (28 ounces) diced tomatoes, undrained
  • 3/4 cup chopped green pepper
  • 1/2 cup water
  • 1 can (8 ounces) sliced mushrooms, drained
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup (4 ounces) shredded cheddar cheese

DIRECTIONS

In a large skillet, brown beef and onions; drain. Stir in uncooked spaghetti and the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until the spaghetti is tender. Sprinkle with cheese; cover and heat until melted. Yield: 4-6 servings.
